Preparation

Season & Cook Tri Tip
Season tri tip on baking tray. Place on middle rack. Start the first cook sequence.
- 1 pinch Black Pepper
- 1 kg Beef Tri-Tip Roast
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Salt

Prep Mashed Potatoes
Prepare potatoes. Place potatoes into a large pot, cover with water, season with salt, and bring to a boil. Reduce heat to medium-high, and cook potatoes for 20 mins.
- 680 g , quartered New Potatoes
- 1.4 L Water
- 2 tsp Salt

Cook Green Beans
Trim green beans and arrange on a baking tray. Drizzle green beans with olive oil and season. Once the tri-tip's first cook sequence is up, place the green beans on a rack below the tri-tip and start the next cook sequence.
- 1 pinch Black Pepper
- 1 tsp Salt
- 1 Tbsp , extra virgin Olive Oil
- 450 g , trimmed Fresh Green Beans

Season & Mash Potatoes
Strain potatoes in sink. Place back in same pot. Mash all ingredients together. Cover to keep warm.
- 4 , minced Garlic Cloves
- 1 Tbsp Unsalted Butter
- 120 g Double Cream
- 2 Tbsp Fresh Horseradish

Sauce Creation
Heat Maple Onion sauce on medium low. Add ingredients and cook for 5 minutes stirring occasionally. Remove from heat and set aside.
- 320 g Onion Maple Confit
- 7 g , leaves removed Fresh Thyme
- 2 , minced Garlic Cloves

Serve & Enjoy!
Slice tri tip in 6 mm thick slices and top with Maple Onion Marmalade. Serve with green beans & horseradish mashed potatoes.
