Garlic Chicken with Sweet Potatoes and Ramen - Innit

  • Boneless Skinless Chicken Breasts 4

Canned/Bottled Goods

  • Low Sodium Chicken Stock 120 mL

  • Vegetable Stock 120 mL

  • Honey 2 Tbsp

Produce

  • Sweet Potatoes 2

  • Spring Onions 5 1/8 tsp

  • Ginger Root 2 tsp

  • Garlic Clove 10 cloves

Spices

  • Red Pepper Flakes 1 pinch

  • Salt 1 tsp

  • Black Pepper 1 pinch

Dry Goods

  • Ramen Noodle 280 g

Pantry

  • Tap Water 950 mL

  • Soy Sauce 2 Tbsp

  • Sesame Seed Oil 89 mL

Preparation

  1. Cook Ramen

    Bring water to a boil in a small saucepan. Add the noodles & cook for 2-3 minutes, until noodles are tender. Drain. Set a pan to medium high for 1 minute. Add oil, garlic & spring onions. Cook & stir until fragrant, about 30 seconds. Add noodles & stir fry until noodles are coated & warmed through, 1-2 minutes. *Add a little more oil as desired.

    • 950 mL Tap Water
    • 280 g Ramen Noodle
    • 2 Tbsp Sesame Seed Oil
    • 2 cloves, minced Garlic Clove
    • 4, thinly sliced Spring Onion
  2. Cook Chicken

    Prepare ingredients. Set pan over high heat for 1 minute. Add 2 tbsp sesame oil & chicken. Cook for 3 to 4 min per side or until chicken is browned & cooked through. Remove from pan. Reduce heat to medium; add garlic & cook until fragrant, 30 seconds. Add remaining ingredients; bring to a boil, allowing sauce to thicken, about 1 minute. Add chicken back in, coat with sauce.

    • 2 Tbsp, divided Sesame Seed Oil
    • 4, cut into 1-inch chunks Boneless Skinless Chicken Breasts
    • 4 cloves, minced Garlic Clove
    • 2 Tbsp Honey
    • 2 Tbsp Soy Sauce
    • 120 mL Low Sodium Chicken Stock
    • 1 pinch Red Pepper Flakes
    • g, to taste Salt
  3. Sauté Sweet Potato

    Prepare ingredients. Set pan over medium heat for 1 minute. Add oil and sweet potatoes. Cook & stir until they start to soften, 8-10 minutes. Add stock, spring onions, ginger, & garlic. Cook until the stock evaporates & potatoes are tender & browned - about 10 minutes. Season.

    • 1 Tbsp Sesame Seed Oil
    • 1, peeled and cut into 1-inch dice Sweet Potato
    • 60 mL Vegetable Stock
    • 2 tsp, thinly sliced Spring Onions
    • 1 tsp, minced Ginger Root
    • 2 cloves, minced Garlic Clove
    • 1/2 tsp Salt
    • 1 pinch Black Pepper
  4. Serve and Enjoy!
