Wild Rice Salad - Innit

Ingredients

  • Fresh Celery 100 g

  • Celery Leaves 51 g

  • Fresh Pink Lady Apple 1

  • Fresh Eureka Lemon 1/2

  • Cotton Candy Grape 100 g

Pantry

  • Walnut 80 g

  • Extra Virgin Olive Oil 120 mL

Dry Goods

  • Wild Rice 160 g

Spices

  • Salt 2 1/3 tsp

  • Black Peppercorn 2 tsp

Preparation

  1. Cook Rice

    Combine ingredients & bring to a boil. Cook rice. Cool rice by straining it under cold running water.

    • 710 mL Tap Water
    • 160 g Wild Rice
    • 2 tsp Salt
  2. Ingredient Prep

    Prepare ingredients. Reserve celery leaves for garnish!

    • 100 g, sliced diagonally Fresh Celery
    • 80 g, roasted, chopped Walnut
    • 100 g, sliced Cotton Candy Grape
    • 51 g Celery Leaves
    • 1, triangle slice Fresh Pink Lady Apple
  3. Salad Assembly

    Season rice & chopped ingredients in a large bowl. Mix well.

    • 1/3 tsp Salt
    • 1/2, juiced Fresh Eureka Lemon
    • 120 mL Extra Virgin Olive Oil
    • 2 tsp, Cracked Black Peppercorn
  4. Taste

    Plate in platter or large bowl. Garnish with celery leaves.
