Tzatziki Salmon with Courgette and Couscous - Innit

  • Wild Atlantic Salmon 680 g

  • Couscous 170 g

Produce

  • Mint 7 g

  • Persian Cucumber 1

  • Italian Parsley 15 g

  • Lemon 1

  • Courgettes 2

  • Fresh Thyme 30 g

  • Garlic Cloves 4

Spices

  • Salt 1 Tbsp

Dairy & Eggs

  • Plain Greek Yogurt 120 g

Pantry

  • Extra Virgin Olive Oil 7 tsp

Preparation

  1. Prep Salmon

    Season salmon on sheet pan. Leave room for the courgette!

    • 680 g Wild Atlantic Salmon
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
  2. Cook Salmon & Courgette

    Prepare ingredients. Season courgette & add to sheet pan. Place in oven on top rack. Start cook sequence.

    • 2, sliced into circles Courgettes
    • 15 g, leaves removed Fresh Thyme
    • 1 Garlic Clove
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
  3. Tzatziki Creation

    Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in refrigerator.

    • 120 g Plain Greek Yogurt
    • 1, juiced Lemon
    • 50 g, small dice Persian Cucumber
    • 7 g, finely chopped Mint
    • 15 g, finely chopped Italian Parsley
    • 2, minced Garlic Cloves
    • 1/2 tsp Salt
    • 1 Tbsp Extra Virgin Olive Oil
  4. CousCous Creation

    Boil water. Add whole thyme sprigs, garlic & couscous to water. Stir. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

    • 170 g Couscous
    • 15 g Fresh Thyme
    • 2, smashed Garlic Cloves
    • 1/2 tsp Salt
    • 300 ml Water
  5. Serve & Enjoy!

    Top salmon with Tzatziki. Serve with courgette & couscous.
