Preparation

Prep Salmon
Season salmon on baking tray. Leave room for the courgette!
- 680 g Salmon Fillet
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Salt

Cook Salmon & Courgette
Prepare ingredients. Season courgette & add to baking tray. Place in oven on top rack. Start cook sequence.
- 2 , sliced into circles Courgettes
- 15 g , leaves removed Fresh Thyme
- 1 , minced Garlic Clove
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Salt

Tzatziki Creation
Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in refrigerator.
- 120 g Plain Greek Yogurt
- 1 , juiced Lemon
- 50 g , small dice Cucumber
- 7 g , finely chopped Mint
- 15 g , finely chopped Parsley
- 1 , minced Garlic Clove
- 1/2 tsp Salt
- 1 Tbsp Extra Virgin Olive Oil

Couscous Creation
Add water, thyme sprigs, garlic, and salt into a pot. Bring to a boil and add stir in couscous. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

- 1/2 tsp Salt
- 300 ml Water

Serve & Enjoy!
Top salmon with tzatziki. Serve with courgette & couscous.
