Preparation

  1. Prep Salmon

    Season salmon on baking tray. Leave room for the courgette!

    • 680 g Salmon Fillet
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
  2. Cook Salmon & Courgette

    Prepare ingredients. Season courgette & add to baking tray. Place in oven on top rack. Start cook sequence.

    • 2 , sliced into circles Courgettes
    • 15 g , leaves removed Fresh Thyme
    • 1 , minced Garlic Clove
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
  3. Tzatziki Creation

    Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in refrigerator.

    • 120 g Plain Greek Yogurt
    • 1 , juiced Lemon
    • 50 g , small dice Cucumber
    • 7 g , finely chopped Mint
    • 15 g , finely chopped Parsley
    • 1 , minced Garlic Clove
    • 1/2 tsp Salt
    • 1 Tbsp Extra Virgin Olive Oil
  4. Couscous Creation

    Add water, thyme sprigs, garlic, and salt into a pot. Bring to a boil and add stir in couscous. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

    • 170 g Couscous
    • 15 g Fresh Thyme
    • 1 , peeled Garlic Clove
    • 1/2 tsp Salt
    • 300 ml Water
  5. Serve & Enjoy!

    Top salmon with tzatziki. Serve with courgette & couscous.
