Broccoli Cauliflower Rice Bowl with Chili, Raisins & Soft Boiled Eggs - Innit

  • Fresh Broccoli 2 heads

  • Fresh Eureka Lemon 1/2

  • Cauliflower 1 head

  • Fresh Thyme 2 sprigs

  • Garlic Clove 4 cloves

Spices

  • Salt 2 tsp

  • Red Pepper Flakes 1 pinch

  • Black Pepper 3/4 tsp

Dairy & Eggs

  • Whole Eggs 8

Pantry

  • Olive Oil 59 mL

  • Seedless Raisin 45 g

Canned/Bottled Goods

  • Vegetable Stock 120 mL

Preparation

  1. Cauliflower Rice Creation

    Prepare ingredients. Add cauliflower to a food processor. Chop/Pulse until it resembles rice. Set pan to high heat for 2 minutes. Add oil, cauliflower rice, salt, pepper, thyme & garlic. Stir & cook for 4 minutes. Discard garlic & thyme.

    • 1 head, chopped Cauliflower
    • 2 cloves, peeled Garlic Clove
    • 2 Tbsp Olive Oil
    • 2 sprigs Fresh Thyme
    • 1/2 tsp Salt
    • 1 pinch Black Pepper
  2. Soft Boil Eggs

    Bring eggs and water to a boil over high heat. Reduce heat; simmer for 4 minutes.

    • 950 mL, to heat Tap Water
    • 8 Whole Eggs
  3. Ice & Peel Eggs

    Add ice and water to small bowl. Remove eggs from heat; add to prepared ice bath. Cool for 90 seconds. Carefully, peel eggs; cut in half. Season.

    • 8 Whole Eggs
    • 430 g Ice
    • 470 mL, cold Tap Water
    • 1 tsp Salt
    • 1/2 tsp Black Pepper
  4. Prep Veggies

    Prep ingredients. Set half the garlic aside. Set pan to high heat for 2 minutes. Add ingredients; cook for 2-3 minutes

    • 2 heads, chopped Fresh Broccoli
    • 2 Tbsp Olive Oil
    • 2 cloves, sliced Garlic Clove
  5. Cook Broccoli

    Add all ingredients to pan with broccoli. Cover & cook for 3 minutes.

    • 1 pinch Red Pepper Flakes
    • 1 clove, sliced Garlic Clove
    • 45 g Seedless Raisin
    • 120 mL Vegetable Stock
  6. Season Broccoli

    Season broccoli. Stir to combine.

    • 1/2 tsp Salt
    • 1 pinch Black Pepper
    • 1/2, juiced Fresh Eureka Lemon
  7. Combine Eggs and Broccoli

    Serve over Cauliflower Rice. Enjoy!
