Tapenade Tofu with Cauliflower & Sweet Potatoes - Innit

Ingredients

  • Tarragon 2 tablespoons

  • Parsley 1/4 bunch

  • Sweet Potatoes 3

  • Orange 1

  • Cauliflower 1 head

  • Lemon 1/2

  • Thyme 4 sprigs

  • Garlic Clove 3 cloves

Spices

  • Red Pepper Flakes 1 pinch

  • Salt 1 tablespoon

  • Black Pepper 1 pinch

Packaged Products

  • Extra Firm Tofu 2 packages

Pantry

  • Olive Oil 81 milliliters

  • White Wine Vinegar 1 tablespoon

  • Light Brown Sugar 50 grams

Canned/Bottled Goods

  • Kalamata Olive 70 grams

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Cook Sweet Potatoes

    Add sweet potatoes to a large bowl & drizzle with olive oil, toss to evenly coat. Add remaining ingredients and toss again. Arrange sweet potato slices in even layer. Cook for 20 - 30 minutes.

    • 1, juiced Orange
    • 3, sliced into circles Sweet Potatoes
    • 50 grams Light Brown Sugar
    • 4 sprigs Thyme
    • teaspoon, enough to coat Olive Oil
    • 1 teaspoon Salt
  3. Cook Cauliflower

    Toss or coat cauliflower & garlic with olive oil. Season with salt. Cook for 25 minutes.

    • 1 head, small florets Cauliflower
    • 2 tablespoons Olive Oil
    • 1 teaspoon Salt
    • 2 cloves, sliced Garlic Clove
  4. Cook Tofu

    Drain tofu and pat dry. Season. Cook for 22 - 28 minutes.

    • 1 pinch Black Pepper
    • 2 packages, halved Extra Firm Tofu
    • 1 1/2 tablespoons Olive Oil
    • 1 teaspoon Salt
  5. Flavour Creation

    Prepare all ingredients. Combine in a bowl & mix. Season to taste!

    • 70 grams Kalamata Olive
    • 1 clove, minced Garlic Clove
    • 1 pinch Red Pepper Flakes
    • 1/4 bunch, chopped, finely Parsley
    • 2 tablespoons, chopped Tarragon
    • 2 tablespoons Olive Oil
    • 1/2, zested Lemon
    • 1 tablespoon White Wine Vinegar
  6. Serve & Enjoy!
