Roasted Sweet Potato Salad - Innit

  • Fresh Sage Leaf 12 g

  • Dried Cranberries 20 g

  • Orange Juice 60 mL

  • Salt 3 Tbsp

  • Black Pepper 2 tsp

  • Roasted Pine Nut 40 g

Pantry

  • Cider Vinegar 4 Tbsp

  • Extra Virgin Olive Oil 150 mL

Preparation

  1. Ingredient Prep

    Preheat oven to 175 C. Prepare ingredients. Toss sweet potato in salt & oil. Roast for 15 minutes.

    • 910 g, medium diced Sweet Potato
    • 2 Tbsp Salt
    • 2 Tbsp Extra Virgin Olive Oil
    • 1, segmented Navel Orange
    • 1 tsp, ground Black Pepper
  2. Flavour Creation

    Combine ingredients in a medium bowl. Mix well.

    • 1 Tbsp Salt
    • 120 mL Extra Virgin Olive Oil
    • 40 g Roasted Pine Nut
    • 20 g Dried Cranberries
    • 60 mL Orange Juice
    • 4 Tbsp Cider Vinegar
    • 1 tsp, ground Black Pepper
  3. Taste

    Plate potatoes on a platter or bowl. Top with orange segments and pine nut mixture. Garnish with goat's cheese, more pine nuts if desired & sage leaves.

    • 60 g, crumbled Goat's Cheese
    • 12 g Fresh Sage Leaf
