Romaine Salad with Corn Mix & Balsamic Vinaigrette - Innit

  • Fresh Italian Parsley 2 Tbsp

  • Fresh Chives 2 Tbsp

  • Fresh Romaine Hearts 2

  • Fresh Cilantro 1/2 bunch

  • Fresh Persian Limes 2

  • Fresh Eureka Lemon 1/4

  • Fresh Red Tomatoes 2

Canned/Bottled Goods

  • Balsamic Vinegar 2 Tbsp

  • Honey 1/2 Tbsp

Dairy & Eggs

  • Goat's Cheese 110 g

Spices

  • Salt 1 tsp

  • Black Pepper 2 pinches

  • Chilli Powder 1 Tbsp

Frozen Products

  • Frozen Sweetcorn 570 g

Pantry

  • Dijon Mustard 1 Tbsp

  • Olive Oil 90 mL

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Whisk Dressing

    Whisk together mustard, honey, balsamic, in a bowl. Gradually, add oil to emulsify. Add lemon zest/juice. Season.

    • 2 Tbsp Balsamic Vinegar
    • 1 Tbsp Dijon Mustard
    • 1/2 Tbsp Honey
    • 60 mL Olive Oil
    • 1 pinch Salt
    • 1 pinch Black Pepper
    • 1/4, zested + juiced Fresh Eureka Lemon
  3. Flavour & Cook Corn

    Toss corn with oil, lime, chilli powder & salt. Cook for 20 minutes. Top with coriander.

    • 570 g Frozen Sweetcorn
    • 2 Tbsp Olive Oil
    • 2, juiced Fresh Persian Limes
    • 1 Tbsp, *adjust to spice preference Chilli Powder
    • 1 tsp Salt
    • 1/2 bunch, leaves removed Fresh Cilantro
  4. Prep Romaine

    Discard root end. Wash leaves & dry.

    • 2, chopped Fresh Romaine Hearts
  5. Combine Herbs & Goat's Cheese

    Fold herbs into goat cheese. Season. Mix well.

    • 2 Tbsp, minced Fresh Italian Parsley
    • 2 Tbsp, minced Fresh Chives
    • 110 g Goat's Cheese
    • 1 pinch Black Pepper
  6. Quarter Tomatoes

    Quarter tomatoes.

    • 2, quartered Fresh Red Tomatoes
  7. Serve and Enjoy!
