  • Tinned Coconut Milk 1 can

  • Fish Sauce 2 tsp

  • Broccoli 340 g

  • Lime 1

  • Fresh Thyme 1/2 bunch

  • Garlic Cloves 2

Spices

  • Salt 1 Tbsp

Dry Goods

  • Long Grain Brown Rice 180 g

Pantry

  • Water 470 ml

  • Green Curry Paste 2 Tbsp

  • Extra Virgin Olive Oil 2 Tbsp

  • Light Brown Sugar 2 tsp

Preparation

  1. Boil Water

    Prepare garlic. Combine all ingredients in a large pot and bring to a boil.

    • 1/2 tsp Salt
    • 470 ml Water
    • 1/2 bunch Fresh Thyme
    • 2, smashed Garlic Cloves
  2. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 180 g Long Grain Brown Rice
  3. Cook Chicken

    Season chicken breast on baking tray. Cook on top rack. Start cook sequence.

    • 680 g Boneless Skinless Chicken Breast
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
  4. Prep & Cook Broccoli

    Season broccoli. Add broccoli to baking tray. Start next cook sequence.

    • 340 g Broccoli
    • 1 tsp Salt
    • 1 Tbsp Extra Virgin Olive Oil
  5. Thai Green Curry Creation

    Bring all ingredients to a boil. Simmer for 15 minutes, stirring occasionally.

    • 2 Tbsp Green Curry Paste
    • 1 can Tinned Coconut Milk
    • 2 Tbsp, juiced Lime
    • 2 tsp Fish Sauce
    • 2 tsp Light Brown Sugar
    • 1/2 tsp Salt
  6. Serve & Enjoy!

    Slice chicken breast into 1.25 cm slices and top with Thai Green Curry.
