  • Sweet Potatoes 3

  • Jicama Bean 140 g

  • Coriander 90 g

  • Oranges 2

  • Limes 3

  • Green Jalapeño Pepper 1

  • Garlic Cloves 2

Spices

  • Salt 1 Tbsp

  • Chilli Powder 1/2 tsp

Preparation

  1. Cook Sweet Potatoes

    Prepare sweet potatoes. Arrange sliced sweet potatoes in an even layer to a baking tray. Drizzle with olive oil. Season with remaining ingredients. Cook for 20 - 30 minutes on the middle oven rack.

    • 3, sliced into circles Sweet Potatoes
    • 2 tsp Light Brown Sugar
    • 1, juiced Orange
    • 2 Tbsp Extra Virgin Olive Oil
    • 1/2 tsp Salt
  2. Assemble Cucumber Jicama Salad

    Prepare ingredients. Combine in a medium bowl. Mix well.

    • 1, sliced into circles Cucumber
    • 140 g, 0.5 cm sticks Jicama Bean
    • 1/2 tsp Chilli Powder
    • 2 tsp Extra Virgin Olive Oil
    • 1 tsp Salt
    • 1, juiced Lime
  3. Prep & Cook Prawns

    Season prawns on a baking tray. Cook on top rack for 4 minutes.

    • 450 g Prawn
    • 1 tsp Extra Virgin Olive Oil
    • 1 tsp Salt
  4. Cuban Mojo Sauce Creation

    Add ingredients to a blender. Blend until smooth.

    • 2 Garlic Cloves
    • 1 Green Jalapeño Pepper
    • 90 g Coriander
    • 2, zested and juiced Limes
    • 2 Tbsp White Wine Vinegar
    • 1/2 tsp Salt
    • 2 tsp Extra Virgin Olive Oil
    • 1, zested and juiced Orange
  5. Serve & Enjoy!

    Combine prawns with Mojo Sauce. Serve with salad & sweet potatoes.
