Thai Red Curry Ribs with Green Beans, Mac & Cheese - Innit

  • Plain Flour 30 grams

  • Red Curry Paste 48 grams

  • Macaroni 120 grams

Pantry

  • Olive Oil 74 milliliters

  • Sugar 2 tablespoons

  • Chives 1 tablespoon

  • Cilantro 1/2 bunch

  • Lime 1/2

  • Green Beans 450 grams

  • Thyme 1 sprig

  • Garlic Clove 2 cloves

Canned/Bottled Goods

  • Tinned Coconut Milk 470 milliliters

  • Fish Sauce 1 tablespoon

Dairy & Eggs

  • Whole Milk 240 milliliters

  • Double Cream 240 milliliters

  • Unsalted Butter 2 tablespoons

  • Muenster Cheese 110 grams

Spices

  • Salt 5 1/2 teaspoons

  • Black Pepper 3 pinches

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Cook Ribs

    Season ribs on all sides. Cook for 45 minutes, bone side up.

    • 1/2 tablespoon Salt
    • 2 tablespoons Olive Oil
    • 1.1 kilograms Baby Back Rib
    • 1 pinch Black Pepper
  3. Cook Pasta

    Cook the macaroni in boiling salted water until al dente. Drain pasta & set aside.

    • 2 teaspoons Salt
    • 120 grams Macaroni
    • 710 milliliters Water
  4. Make Curry Sauce

    Heat olive oil over a medium-high heat; stir in curry paste & simmer for 4 minutes. Add in coconut milk; cook for 4 minutes.

    • 48 grams Red Curry Paste
    • 2 tablespoons Olive Oil
    • 470 milliliters Tinned Coconut Milk
  5. Flavour Curry

    Add remaining ingredients to curry & coconut milk mixture. Simmer for 2 minutes. Remove from heat.

    • 1 tablespoon Fish Sauce
    • 2 tablespoons Sugar
    • 1/2 teaspoon Salt
    • 1/2 Lime
    • 1/2 bunch Cilantro
  6. Start Mac & Cheese Sauce

    In a medium saucepan, melt butter over medium heat; add in flour & whisk until combined. Gradually add in milk & heavy cream & whisk until smooth. Add thyme & garlic. Stir constantly over low heat for 10 minutes, until thickened or coats the back of a spoon.

    • 30 grams Plain Flour
    • 240 milliliters Whole Milk
    • 1 sprig Thyme
    • 2 cloves, smashed Garlic Clove
    • 2 tablespoons Unsalted Butter
    • 240 milliliters Double Cream
  7. Finish Mac & Cheese Sauce

    Turn off heat, remove garlic & thyme. Add cheese, salt, pepper, & chives. Fold in cooked macaroni.

    • 1 tablespoon, minced Chives
    • 1 pinch Black Pepper
    • 120 grams Macaroni
    • 1/2 teaspoon Salt
    • 110 grams, shredded Muenster Cheese
  8. Flip Ribs

    Remove baking tray from oven. Flip ribs bone-side down and continue to cook for 10 minutes. Remove from oven and let rest for 5 minutes.

    • 1.1 kilograms Baby Back Rib
  9. Cook Green Beans

    Drizzle green beans with olive oil. Season. Cook for 10 minutes.

    • 1 pinch Black Pepper
    • 1 teaspoon Salt
    • 1 tablespoon Olive Oil
    • 450 grams, trimmed Green Beans
  10. Serve & Enjoy!
