Penne Pomodoro with Bacon, Broccoli & Capers - Innit

  • Olive Oil 75 milliliters

  • Raisins 35 grams

  • Sugar 1/2 tablespoon

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Simmer Sauce

    Prepare ingredients. Set a pan to medium-high heat. Add oil; sauté onion & garlic for 3 minutes. Add tomatoes, simmer for 10 minutes.

    • 60 milliliters Olive Oil
    • 1/2, chopped White Onion
    • 2 cloves, minced Garlic Clove
    • 790 grams Tinned Chopped Tomatoes
  3. Cook Broccoli

    Prepare ingredients. Toss broccoli in oil with garlic, raisins, & capers. Season. cook 12-14 minutes.

    • 2 heads, medium florets Broccoli
    • 2 cloves, sliced Garlic Clove
    • 35 grams Raisins
    • 26 grams, drained well Capers
    • 1 teaspoon Red Pepper Flakes
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Salt
  4. Boil Pasta

    Bring a large pot of water to a boil; add salt. Cook penne until al dente, firm to bite but not soft.

    • 190 grams Penne
    • teaspoon Water
    • 1 tablespoon Salt
  5. Cook Bacon

    Arrange bacon slices on baking tray. Cook for 15 minutes until bacon is golden brown & crispy. Roughly chop.

    • 5 slices Bacon
  6. Season Sauce

    Season sauce.

    • 1/4 bunch, hand torn Basil
    • 1 tablespoon Salt
    • 1/2 teaspoon Black Pepper
    • 1/2 tablespoon Sugar
  7. Serve and Enjoy!
