Watermelon Wedge Salad - Innit

  • Bacon 6 slices

  • Mayonnaise 80 mL

  • Iceberg Lettuce 1 head

  • Fresh Basil 4 Tbsp

  • Fresh Chives 4 Tbsp

  • Navel Orange 1

  • Red Cherry Tomatoes 150 g

  • Watermelon 300 g

Spices

  • Salt 2 tsp

  • Red Wine Vinegar 3 Tbsp

  • Black Pepper 1 tsp

Dairy & Eggs

  • Danish Blue Cheese 140 g

  • Sour Cream 80 mL

Preparation

  1. Ingredient Prep

    Preheat oven to 175C. Prepare ingredients. Reserve 1 tbsp chives for garnish! Cook bacon for 15 minutes.

    • 5 slices Bacon
    • 1 head Iceberg Lettuce
    • 300 g, diced Watermelon
    • 150 g, halved Red Cherry Tomatoes
    • 4 Tbsp, sliced Fresh Chives
  2. Make Dressing

    Combine ingredients in a medium bowl & mix well.

    • 80 mL Sour Cream
    • 80 mL Mayonnaise
    • 3 Tbsp Red Wine Vinegar
    • 2 tsp Salt
    • 1 tsp Black Pepper
    • 3 Tbsp, sliced Fresh Chives
    • 130 g, crumbles Danish Blue Cheese
  3. Salad Assembly

    Place the iceberg lettuce on a platter & top with the dressing. Add tomatoes, hand-torn bacon, watermelon & basil. Garnish with blue cheese & orange zest. Enjoy!

    • 1 Tbsp, crumbles Danish Blue Cheese
