INGREDIENTS

  • 1 lb Jimmy Dean Pork Sausage

  • 1/4 bunch Cilantro

  • 1 Lime

  • 2 Green Jalapeño Peppers

  • 1 lb Tomatillo

  • 4 Garlic Cloves

  • 1 White Onion

  • 1 Jicama

  • 8 Corn Tortillas

  • 1 pinch Black Pepper

  • 2 1/2 tsp Kosher Salt

  • 2 tsp Ground Cumin

  • 2 tsp Chili Powder

  • 3/8 cup Olive Oil

STEPS

  1. Gather Ingredients

  2. Preheat Oven

    Preheat oven to 425F.

  3. Salsa Creation

    Prepare tomatillos, onions, and jalapenos, and set aside on a baking sheet.

    Peel garlic and add to baking sheet, tossing with oil and seasoning with salt and pepper.

    Roast in oven for 20 minutes.

  4. Flavor Jicama

    Add all ingredients to a bowl. Stir to combine.

  5. Cook Meat

    Heat oil in a large skillet over medium-high heat.

    Add sausage, in small pieces, and cook, stirring occasionally, for about 5 minutes or until browned.

  6. Warm Up Tortillas

    Wrap tortillas in kitchen towel. Warm in microwave for 1-2 minutes.

  7. Salsa Creation Cont.

    Transfer tomatillo mixture to a blender/food processor.

    Add remaining ingredients.

    Pulse several times until chunky.

  8. Serve

    Assemble tacos and enjoy!
