Honey Mustard Pork Loin with Brussels Sprouts and Brown Rice - Innit

  • Pork Tenderloin 1 1/2 pounds

  • Brown Rice 1 cup

  • Extra Virgin Olive Oil 2 tablespoons

  • Dijon Mustard 1/4 cup

  • Water 2 cups

  • Lemon 1

  • Thyme 0.7 ounce

  • Brussels Sprout 3/4 pound

  • Shallot 1

  • Garlic 2 cloves

Canned/Bottled Goods

  • Honey 0.5 ounce

Dairy & Eggs

  • Plain Greek Yogurt 1/2 cup

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 1 pinch

Preparation

  1. Gather Ingredients

  2. Boil Water

    Combine all ingredients in a large pot and bring to boil.

    • 1/2 teaspoon Kosher Salt
    • 2 cups Water
    • 1 pinch Black Pepper
    • 1/2 bunch Thyme
    • 2 cloves, smashed Garlic
  3. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 1 cup Brown Rice
  4. Preheat

    Preheat the oven to 425 F. Line sheet pan with foil.

    Connect Oven
  5. Prep & Cook Pork

    Season pork on sheet pan, leaving enough room to add brussels sprouts later. Cook for 30 minutes on middle rack.

    • 1 tablespoon Extra Virgin Olive Oil
    • 2 teaspoons Kosher Salt
    • 1 1/2 pounds Pork Tenderloin
  6. Prep & Cook Brussels Sprouts

    Toss brussels in a bowl with oil, then season. Add to sheet pan with pork. Cook for 15 minutes.

    • 3/4 pound, halved Brussels Sprout
    • 1 tablespoon Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
  7. Honey Mustard Creation

    Prepare ingredients. Heat pan over medium-high. Add olive oil, shallot, & thyme. Saute for 3 minutes. Add honey & mustard, cook for 2 minutes. Remove from heat & transfer to fidge to cool, about 5 minutes.

    • 1/2 Lemon
    • 0.5 ounce Honey
    • 1/4 cup Dijon Mustard
    • 1, minced Shallot
    • 5.3 ounces Plain Greek Yogurt
    • 0.3 ounce Thyme
    • 1/2 teaspoon Kosher Salt
  8. Serve & Enjoy!

    Slice pork loin in 1/2" slices and top with Honey Mustard Sauce. Serve with Brussels Sprouts & Brown Rice.
