Snap Pea & Radish Salad - Innit

  • Red Radishes 10

  • Italian Parsley 2 Tbsp

  • Mint 2 Tbsp

  • Snap Pea 1 cup

  • Olive Oil 1/4 cup

Dairy & Eggs

  • Burrata 1

Spices

  • Kosher Salt 1 1/2 Tbsp

  • Black Pepper 2 tsp

Preparation

  1. Ingredient Prep

    Prepare ingredients. Reserve thin radish slices for garnish.

    • 1 cup, cleaned & halved on bias Snap Pea
    • 9, quartered Red Radishes
  2. Salad Assembly

    Combine ingredients in a large bowl. Mix well.

    • 1 cup, cleaned & halved on bias Snap Pea
    • 9, quartered Red Radishes
    • 1/4 cup, Extra Virgin Olive Oil
    • 1 1/2 Tbsp Kosher Salt
    • 2 tsp, ground Black Pepper
    • 1, juiced, zested Lemon
  3. Taste

    Plate salad on a platter or a bowl. Spoon burrata in between the peas & radishes. Garnish with mint, parsley leaves. Top with lemon zest, ground black pepper & extra virgin olive oil if desired.
