1/4 cup Corn Masa Flour

1 Chipotle Chiles in Adobo Sauce

1 can Tomato Sauce

2 cups Chicken Stock

2 Tbsp Canned Red Tomato Paste with no salt

1 Tbsp Ground Coriander Seeds

1 Tbsp Ground Cumin

1 Tbsp Dried Oregano

1 Tbsp Chili Powder

1/2 Tbsp Kosher Salt

1 Tbsp Smoked Paprika

3 Tbsp Extra Virgin Olive Oil

1 tsp Granulated Sugar

Prepare ingredients.

Heat oil in a large pot over medium-high heat.
Add onions and garlic, and cook, stirring occasionally, for 3 minutes, or until soft.
Add sausage, and cook, breaking it up with a spoon into smaller pieces, for 5 minutes or until slightly browned.
Add spices, tomato paste, tomato sauce, chipotle and chicken stock. Stir to mix.
Whisk in the corn flour and let simmer, for 5 minutes or until slightly thickened.
Season with sugar and salt.

Ladle chili into bowls. Top with sour cream and cheese. Garnish with chives and cilantro.
Serve with favorite tortilla chips (optional).
