Yellow Beet Salad - Innit

Ingredients

  • Yellow Beet 2 pounds

  • Parsley 3 tablespoons

Spices

  • Kosher Salt 1/4 cup

  • Black Pepper 2 teaspoons

Dairy & Eggs

  • Goat Cheese 1 cup

Pantry

  • Extra Virgin Olive Oil 1/2 cup

Canned/Bottled Goods

  • Balsamic Vinegar 1/4 cup

Baking Products

  • Flatbread Crisp 2 cups

Preparation

  1. Boil Beets

    Boil water & salt. Add in whole beets and boil for 40 minutes. Peel & cut beets.

    • 2 pounds Yellow Beet
    • 12 cups Water
    • 3 tablespoons Kosher Salt
  2. Salad Assembly

    Combine balsamic vinegar & olive oil. Add vinaigrette to beets. Season with salt & pepper.

    • 1 tablespoon Kosher Salt
    • 1/2 cup Extra Virgin Olive Oil
    • 1/4 cup Balsamic Vinegar
    • 2 teaspoons, ground Black Pepper
  3. Taste

    Plate in a bowl or on a platter. Top with goat cheese & parsley leaves. Serve with flat bread.

    • 3 tablespoons, stems removed Parsley
