  • Black Pepper 1 pinch

Preparation

  1. Cook Rice

    In a medium saucepan, bring water, and salt to a boil. Add rice, and reduce heat to low in order to maintain a steady simmer. Cook covered until the rice is tender and the kernels pop open. Strain cooked rice and run it under cold water to cool it down.

    • 3 cups Water
    • 1 cup Wild Rice
    • 2 tsp Kosher Salt
  2. Ingredient Prep

    Prepare ingredients. Reserve celery leaves for garnish!

    • 1 cup, sliced on bias Fresh Celery
    • 2/3 cup, roasted, chopped Walnut
    • 2/3 cup, sliced Red Grapes
    • 1/2 cup Celery Leaves
    • 1, triangle slice Fresh Pink Lady Apple
  3. Salad Assembly

    Add rice and chopped ingredients to a large bowl. Add olive oil, lemon juice and season with salt and pepper. Mix well.

    • 1/2 tsp Kosher Salt
    • 1/2, juiced Lemon
    • 1 1/2 Tbsp Extra Virgin Olive Oil
    • 1 pinch Black Pepper
  4. Taste

    Plate in platter or large bowl. Garnish with celery leaves.
