  • Gruyère Cheese 10 oz

  • Heavy Cream 1 1/2 cups

  • Extra Virgin Olive Oil 2 1/2 Tbsp

  • Black Pepper 1/2 tsp

Canned/Bottled Goods

  • Beef Stock 1/4 cup

  • Chicken Stock 2 cups

  • Sherry Wine 1/4 cup

Preparation

  1. Prepare Potatoes & Onions

    Prepare potatoes and onions.

    • 2 , peeled, diced Russet Potatoes
    • 1 , chopped Yellow Onion
  2. Cook Potatoes & Onion

    Place potatoes and onions in a pot with rest of the ingredients. Bring to a boil and let simmer over medium-low heat for 20 minutes or until potatoes are fork tender.

    • 2 cups Chicken Stock
    • 1 1/2 cups Heavy Cream
    • 6 , peeled Garlic Cloves
    • 1 Tbsp Kosher Salt
  3. Prepare Onion

    Prepare onion.

    • 1 , julienned Yellow Onion
  4. Caramelize Onion

    Heat oil in a skillet over medium heat. Add thyme and onions. Cook, stirring occasionally, for 15 minutes or until onions are caramelized. Add sherry and beef stock and season with salt and pepper. Let simmer until liquid has evaporated. Discard thyme and set aside.

    • 1 Tbsp Extra Virgin Olive Oil
    • 1 sprig Garden Fresh Thyme
    • 1/4 cup Sherry Wine
    • 1/4 cup Beef Stock
    • 1/2 tsp , or to taste Kosher Salt
    • 1/2 tsp Black Pepper
  5. Create Dip

    Add potato and onion mixture to blender and blend until smooth. Add 3/4 (reservering rest for garnish) of the caramelized onions and cheese to blender. Blend until smooth. Season with salt, pepper and olive oil. Blend until well incorporated.

    • 1/2 lb , diced Gruyère Cheese
    • 1/2 tsp Kosher Salt
    • 1 pinch Black Pepper
    • 1 1/2 Tbsp Extra Virgin Olive Oil
  6. Garnish & Serve

    Spoon dip into a bowl and top with cheese, caramelized onions and chives. Garnish with olive oil and black pepper if desired. Serve with crostini or your favorite chips.
