Thai Green Curry Chicken with Broccoli and Brown Rice - Innit

Ingredients

  • Chicken Breast 1 1/2 pounds

Canned/Bottled Goods

  • Canned Coconut Milk 1 can

  • Fish Sauce 2 teaspoons

Produce

  • Thyme 1/2 bunch

  • Lime 1

  • Broccoli 3/4 pound

  • Garlic Clove 2 cloves

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 1 pinch

Dry Goods

  • Brown Rice 1 cup

Pantry

  • Green Curry Paste 2 tablespoons

  • Light Brown Sugar 2 teaspoons

  • Extra Virgin Olive Oil 2 tablespoons

  • Water 2 cups

Preparation

  1. Gather Ingredients

  2. Boil Water

    Combine all ingredients in a large pot and bring to boil.

    • 1/2 teaspoon Kosher Salt
    • 2 cups Water
    • 1 pinch Black Pepper
    • 1/2 bunch Thyme
    • 2 cloves, smashed Garlic Clove
  3. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 1 cup Brown Rice
  4. Preheat

    Preheat the oven to 425 F. Line sheet pan with foil.

    Connect Oven
  5. Bake Chicken

    Season chicken breast on sheet pan. Bake on top rack for 10 minutes.

    • 1 1/2 pounds Chicken Breast
    • 1 tablespoon Extra Virgin Olive Oil
    • 1 teaspoon Kosher Salt
  6. Prep & Cook Broccoli

    Season broccoli. After chicken has cooked for 10 minutes, add broccoli to sheet pan & cook for an additional 15 minutes.

    • 3/4 pound Broccoli
    • 1 teaspoon Kosher Salt
    • 1 tablespoon Extra Virgin Olive Oil
  7. Thai Green Curry Creation

    Bring all ingredients to a boil Simmer for 15 minutes stirring occasionally.

    • 2 tablespoons Green Curry Paste
    • 1 can Canned Coconut Milk
    • 2 tablespoons, juiced Lime
    • 2 teaspoons Fish Sauce
    • 2 teaspoons Light Brown Sugar
    • 1/2 teaspoon Kosher Salt
  8. Serve & Enjoy!

    Slice chicken breast into 1/2" slices and top with Thai Green Curry.
