Wild Rice Salad - Innit

Ingredients

Produce

  • Lemon 1/2

  • Fresh Celery 1 cup

  • Cotton Candy Grape 2/3 cup

  • Pink Lady Apple 1

  • Celery Leaves 1/2 cup

Pantry

  • Walnut 2/3 cup

  • Extra Virgin Olive Oil 1/2 cup

Dry Goods

  • Wild Rice 1 cup

Spices

  • Black Peppercorn 2 teaspoons

  • Kosher Salt 2 1/3 teaspoons

Preparation

  1. Cook Rice

    Combine ingredients & bring to a boil. Cook rice. Cool rice by straining it under cold running water.

    • 3 cups Water
    • 1 cup Wild Rice
    • 2 teaspoons Kosher Salt
  2. Ingredient Prep

    Prepare ingredients. Reserve celery leaves for garnish!

    • 1 cup, sliced on bias Fresh Celery
    • 2/3 cup, roasted, chopped Walnut
    • 2/3 cup, sliced Cotton Candy Grape
    • 1/2 cup Celery Leaves
    • 1, triangle slice Pink Lady Apple
  3. Salad Assembly

    Season rice & chopped ingredients in a large bowl. Mix well.

    • 1/3 teaspoon Kosher Salt
    • 1/2, juiced Lemon
    • 1/2 cup Extra Virgin Olive Oil
    • 2 teaspoons, Cracked Black Peppercorn
  4. Taste

    Plate in platter or large bowl. Garnish with celery leaves.
