1 1/2 lb Wild Atlantic Salmon

2 heads Broccoli

1 Mango
-
1/2 Lime
-
2 Red Radishes

1/2 Red Onion

1/4 bunch Fresh Cilantro Leaf

2 bags UNCLE BEN'S® READY RICE® Whole Grain Brown

1 1/4 tsp Kosher Salt
-
1/2 tsp Crushed Red Peppers

1 tsp Chili Powder
-
2 pinches Black Pepper
-
3 Tbsp Olive Oil
STEPS

Preheat the oven to 425F.
Line two sheet pans with foil.

Drizzle broccoli with olive oil. Season.
Bake for 18 minutes.

Season salmon.
Bake for 10 - 15 minutes, let rest for 5 minutes.
* Why rest? Because proteins continue to cook once removed from the oven!

Combine all of the ingredients in a small bowl & mix well.

Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.
Add water, and heat on medium-high heat, stirring occasionally, for 2 minutes or until heated thoroughly.

Top salmon with mango salsa. Serve with rice & broccoli.
