    Preheat the oven to 425 F. Line sheet pan with foil.

  3. Bake Sweet Potatoes

    Arrange sliced sweet potatoes in an even layer to a sheet pan. Drizzle with olive oil. Season with remaining ingredients. Bake for 20 - 30 minutes on the middle oven rack.

  4. Assemble Cucumber Jicama Salad

    Prepare ingredients. Combine in a medium bowl. Mix well.

    • 5.0 ounces, 1/4" sticks Jicama
    • 1/2 teaspoon Chipotle Chili Powder
    • 2 teaspoons Extra Virgin Olive Oil

    Season shrimp on a sheet pan. Cook on top rack for 4 minutes.

    Add ingredients to a blender. Blend until smooth.

    • 2 cloves Garlic

    • 2, zested and juiced Lime
    • 2 tablespoons White Wine Vinegar
    • 1/2 teaspoon Kosher Salt
    • 2 teaspoons Extra Virgin Olive Oil
