Classic Veggie Burger with Avocado - Innit

Ingredients

  • Lemon 1

  • Carrot 1/2 cup

  • Garlic Clove 2 cloves

  • Avocado 1

  • Shallot 1

Spices

  • Ground Coriander Seed 1/2 teaspoon

  • Kosher Salt 4 teaspoons

  • Black Pepper 1 teaspoon

Dry Goods

  • Instant Potatoes 1/3 cup

Pantry

  • Olive Oil 2 tablespoons

Canned/Bottled Goods

  • Canned Black Beans 1 can

Baking Products

  • Hamburger Roll 4

Preparation

  1. Form Patties

    Smash all of the black beans into a paste like consistency. Grate the carrots, garlic and shallot together. Mix everything together well and portion into 4 equal sized patties.

    • 1 can, 15 oz Canned Black Beans
    • 1/2 cup, grated Carrot
    • 2 cloves, grated Garlic Clove
    • 1, grated Shallot
    • 2 teaspoons Kosher Salt
    • 1/3 cup Instant Potatoes
    • 1/2 teaspoon Ground Coriander Seed
  2. Prep Topping

    Cut the avocado in half and remove the pit. Remove the flesh from the skin and place into a bowl. Add the lemon zest, lemon juice, salt, pepper and oil and mash the avocado up well. Place desired amount on top of burger.

    • 1 Avocado
    • 1, juiced, zested Lemon
    • 2 tablespoons Olive Oil
    • 2 teaspoons Kosher Salt
    • 1 teaspoon Black Pepper
  3. Cook Patties

    Preheat pan to medium-low heat. Add oil and cook your patties for 5 minutes on each side.

    • 1 tablespoon Olive Oil
    • 4, toasted Hamburger Roll
  4. Serve and Enjoy!
