Harissa Aioli Cod with Asparagus and Couscous - Innit

  • Couscous 1 cup

  • Unsalted Almond 1.0 ounce

  • Harissa Paste 1/2 cup

  • Olive Oil 1/3 cup

  • Thyme 0.3 ounce

  • Garlic Clove 1 clove

  • Parsley 1/4 bunch

  • Asparagus 3/4 pound

Canned/Bottled Goods

  • Honey 1 tablespoon

  • Mayonnaise 1/4 pound

Dairy & Eggs

  • Sour Cream 2.0 ounces

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 1 pinch

Preparation

  1. Gather Ingredients

  2. Preheat

    Preheat the oven to 425 F. Line sheet pan with foil.

    Connect Oven
  3. Prep Asparagus

    Season on sheet pan. Set aside.

    • 3/4 pound, ends trimmed Asparagus
    • 1 tablespoon Olive Oil
    • 1 teaspoon Kosher Salt
  4. Cook Cod & Asparagus

    Season on sheet pan. Place cod in oven on top rack. Place asparagus on middle rack. Cook for 20 minutes.

    • 4 fillets, 6 oz Cod Fillet
    • 0.3 ounce, leaves removed Thyme
    • 2 tablespoons Olive Oil
    • 1 tablespoon Kosher Salt
  5. Couscous Prep

    Prepare ingredients. Boil Water.

    • 1 1/2 cups Water
    • 1/4 bunch, chopped Parsley
    • 1/2 cup, chopped Dried Apricot
    • 1.0 ounce, chopped Unsalted Almond
  6. Harissa Aioli Creation

    Combine ingredients in a small to medium bowl & mix well.

    • 1/2 cup Harissa Paste
    • 1 clove, minced Garlic Clove
    • 1, juiced Lemon
    • 1/4 pound Mayonnaise
    • 2.0 ounces Sour Cream
    • 1 tablespoon Honey
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Kosher Salt
  7. Couscous Creation

    Mix ingredients with boiling water & cover. Let steep for 5 minutes.

    • 1/2 cup, chopped Dried Apricot
    • 1.0 ounce, chopped Unsalted Almond
    • 1/2 teaspoon Kosher Salt
    • 1 cup Couscous
    • 1 1/2 cups, boiled Water
  8. Fluff Couscous

    Season & fluff with fork!

    • 1 tablespoon Olive Oil
    • 1/4 bunch, chopped Parsley
    • 1 pinch Black Pepper
    • 1/2 teaspoon Kosher Salt
  9. Serve & Enjoy!

    Top cod with Harissa Aoili sauce. Serve with Apricot CousCous & Asparagus.
