Cottage Pie - Innit

  • Jimmy Dean Pork Sausage 1 lb

  • Panko Breadcrumbs 2 cups

  • Fresh White Pearl Onion 1 cup

  • Extra Virgin Olive Oil 5/6 cup

  • Fresh Garden Thyme 1 sprig

  • Russet Potatoes 5

  • Italian Parsley 1/4 cup

  • Green Peas 1 cup

Canned/Bottled Goods

  • Beef Stock 1/2 cup

Dairy & Eggs

  • Unsalted Butter 2 Tbsp

  • Heavy Cream 1/2 cup

Spices

  • Dried Mustard Powder 2 tsp

  • Black Pepper 1 pinch

  • Kosher Salt 3 1/8 tsp

  • Garlic Powder 1/2 Tbsp

  • Worcestershire Sauce 2 Tbsp

Preparation

  1. Prepare Vegetables

    Prepare potatoes. Place potatoes in a large pot and cover with water. Boil the potatoes for 15 minutes or until soft. Drain to discard water. Meanwhile, prepare carrots and onions.

    • 5, peeled, cut in 6 chunks Russet Potatoes
    • 3, peeled, sliced into coins Carrots
    • 1 cup, peeled, halved Fresh White Pearl Onion
  2. Create Mash

    Mix potatoes with a hand held mixer until crumbly. Add cream, butter, olive oil and salt. Mix until smooth.

    • 1/2 cup Heavy Cream
    • 2 Tbsp Unsalted Butter
    • 1/4 cup Extra Virgin Olive Oil
    • 1 Tbsp Kosher Salt
  3. Preheat Oven

    Preheat the oven to 375F.

  4. Create Filling

    Heat oil in a large skillet over medium-high heat. Add sausage, in small pieces, and thyme, and cook, stirring occasionally, for about 5 minutes or until browned. Add onions, carrots, stock, mustard powder and Worcestershire sauce. Season with salt and pepper and let simmer for 8 minutes. Add peas and parsley, mix to combine.

    • 1/4 cup Extra Virgin Olive Oil
    • 1 lb Jimmy Dean Pork Sausage
    • 1 sprig, large Fresh Garden Thyme
    • 1/2 cup Beef Stock
    • 2 tsp Dried Mustard Powder
    • 2 Tbsp Worcestershire Sauce
    • 1 pinch Kosher Salt
    • 1 pinch Black Pepper
    • 1 cup, frozen Green Peas
    • 2 Tbsp, finely chopped Italian Parsley
  5. Create Crumble

    Mix ingredients in a medium bowl until combined.

    • 2 cups Panko Breadcrumbs
    • 1/3 cup Extra Virgin Olive Oil
    • 1/2 Tbsp Garlic Powder
    • 1 pinch Kosher Salt
  6. Assemble Pie

    Layer the bottom of a casserole or baking dish with the meat mixture. Layer meat mixture with mashed potatoes and cover with panko crumble. Bake for 15 minutes or until crumble is golden brown and casserole is heated through. Let sit for 5 minutes before serving.

  7. Serve & Enjoy

    Drizzle pie with olive oil if desired, and garnish with parsley. Plate and enjoy!
