Tomatillo Pork Tacos with Jicama - Innit

Ingredients

  • Jimmy Dean Pork Sausage 1 lb

Spices

  • Black Pepper 1 pinch

  • Kosher Salt 2 1/2 tsp

  • Ground Cumin 2 tsp

  • Chili Powder 2 tsp

  • Cilantro 1/4 bunch

  • Lime 1

  • Green Jalapeño Peppers 2

  • Tomatillo 1 lb

  • Garlic Clove 4 cloves

  • White Onion 1

  • Jicama 1

Pantry

  • Olive Oil 3/8 cup

Dry Goods

  • Corn Tortillas 8

Preparation

  1. Preheat Oven

    Preheat oven to 425F.

  2. Salsa Creation

    Prepare tomatillos, onions, and jalapenos, and set aside on a baking sheet. Peel garlic and add to baking sheet, tossing with oil and seasoning with salt and pepper. Roast in oven for 20 minutes.

    • 1 lb, quartered Tomatillo
    • 1, 1/4 inch circles White Onion
    • 2, sliced in 4 Green Jalapeño Peppers
    • 4 cloves, peeled Garlic Clove
    • 2 Tbsp Olive Oil
    • 1 tsp Kosher Salt
    • 1 pinch Black Pepper
  3. Flavor Jicama

    Add all ingredients to a bowl. Stir to combine.

    • 1, medium dice Jicama
    • 1/2, juiced Lime
    • 2 tsp Chili Powder
    • 1/2 tsp Kosher Salt
    • 1 Tbsp Olive Oil
  4. Cook Meat

    Heat oil in a large skillet over medium-high heat. Add sausage, in small pieces, and cook, stirring occasionally, for about 5 minutes or until browned.

    • 2 Tbsp Olive Oil
    • 1 lb Jimmy Dean Pork Sausage
  5. Warm Up Tortillas

    Wrap tortillas in kitchen towel. Warm in microwave for 1-2 minutes.

    • 8 Corn Tortillas
  6. Salsa Creation Cont.

    Transfer tomatillo mixture to a blender/food processor. Add remaining ingredients. Pulse several times until chunky.

    • 1/4 bunch Cilantro
    • 2 tsp Ground Cumin
    • 1 tsp Kosher Salt
    • 1/2, juiced Lime
    • 1 Tbsp Olive Oil
  7. Serve

    Assemble tacos and enjoy!
