Tofu with Red Bell Pepper, Yellow Onion & Brown Rice - Innit

Ingredients

Produce

  • Red Bell Peppers 2

  • Fresh Garden Thyme 2/3 bunch

  • Garlic Clove 4 cloves

  • Yellow Onion 1

Spices

  • Black Pepper 3 pinches

  • Kosher Salt 3 1/2 tsp

Packaged Products

  • Extra Firm Tofu 2 packages

Pantry

  • Water 1 1/3 cups

  • Olive Oil 3 Tbsp

Dry Goods

  • Long Grain Brown Rice 2/3 cup

Preparation

  1. Boil Water

    Combine all ingredients in a large pot and bring to boil.

    • 1/2 tsp Kosher Salt
    • 1 1/3 cups Water
    • 1 pinch Black Pepper
    • 1/2 bunch Fresh Garden Thyme
    • 2 cloves, smashed Garlic Clove
  2. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 2/3 cup Long Grain Brown Rice
  3. Preheat

    Preheat the oven to 425 F. Line two sheet pans with foil.

    Connect Oven
  4. Bake Tofu

    Drain tofu and pat dry. Season. Bake for 22 - 28 minutes.

    • 1 pinch Black Pepper
    • 2 packages, halved Extra Firm Tofu
    • 1 1/2 Tbsp Olive Oil
    • 1 tsp Kosher Salt
  5. Cook Peppers & Onions

    Toss peppers, onion, garlic & thyme together. Drizzle with olive oil & season. Bake for 13 minutes.

    • 2, sliced Red Bell Peppers
    • 1, sliced Yellow Onion
    • 1 pinch Black Pepper
    • 1 Tbsp Olive Oil
    • 2 cloves, sliced Garlic Clove
    • 1 tsp Kosher Salt
    • 4 sprigs Fresh Garden Thyme
  6. Serve & Enjoy!
