White Bean, Kale & Pork Chili - Innit

Preparation

  1. Gather Ingredients

  2. Prepare Vegetables

    Prepare vegetables.

    • 1, diced Yellow Onion
    • 1, sliced Fennel Bulb
    • 3 Garlic Cloves
    • 1, sliced Thai Chilli Pepper
  3. Create & Cook Chili

    Heat oil in a large pot over medium-high heat. Add sausage, in small pieces, and cook, for about 5 minutes or until browned. Scoop out the meat and put on a paper towel lined plate. Add prepared vegetables, and cook, stirring occasionally, for 3 minutes or until translucent. Add beans and chicken stock, stir to combine. Add torn up kale leaves and season with salt, stir to combine. Let simmer, stirring occasionally, for 5 minutes. Squeeze lemon into pot, and return cooked sausage into pot. Stir to combine. Add corn flour, and stir to combine. Let simmer, stirring occasionally, for 5 minutes.

    • 3 Tbsp Extra Virgin Olive Oil
    • 1 lb Jimmy Dean Pork Sausage
    • 1 can, 15 oz, liquid reserved White Beans
    • 2 cups Chicken Stock
    • 3 stalks, leaves torn Kale
    • 1/2, juice Lemon
    • 1 Tbsp Kosher Salt
    • 1/4 cup Corn Masa Flour
  4. Create Kale Topping

    Prepare kale and add to a bowl. Add oil, lime juice and cheese. Mix to coat.

    • 2 Kale
    • 1 Tbsp Extra Virgin Olive Oil
    • 2 Tbsp Cotija Cheese
    • 1/2 Lime
  5. Serve & Enjoy

    Ladle chili into bowls. Top with kale mixture and cheese. Garnish with cilantro. Serve with favorite tortilla chips (optional).
