2 Zucchini

1 sprig Garden Fresh Thyme

3 Garlic Cloves

1 Mango
-
1/2 Lime
-
2 Red Radishes

1/2 Red Onion

1/4 bunch Fresh Cilantro Leaf

2 bags UNCLE BEN'S® READY RICE® Original Long Grain

1 1/4 tsp Kosher Salt

1 tsp Chili Powder
-
2 pinches Black Pepper

1/4 cup Olive Oil
STEPS

Preheat the oven to 425F.
Line two sheet pans with foil.

Season salmon.
Bake for 10 - 15 minutes, let rest for 5 minutes.
* Why rest? Because proteins continue to cook once removed from the oven!

Toss zucchini with olive oil, thyme, & garlic.
Season with salt & pepper.
Bake for 12 minutes.

Combine all of the ingredients in a small bowl & mix well.

Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.
Add water, and heat on medium-high heat, stirring occasionally, for 2 minutes or until heated thoroughly.

Top salmon with mango salsa. Serve with rice & zucchini.
