Biscuits & Gravy - Innit

  • Jimmy Dean Pork Sausage 1 lb

Dry Goods

  • All Purpose Flour 1/4 cup

  • Self-Rising Flour 2 cups

Pantry

  • Granulated Sugar 1 tsp

  • Fresno Pepper 1

  • Fresh Sage Leaf 7/12 bunch

Canned/Bottled Goods

  • Ghee 1/4 cup

Dairy & Eggs

  • Buttermilk 3/4 cup

  • Unsalted Butter 3/4 cup

  • Whole Milk 2 1/4 cups

Spices

  • Black Pepper 2 pinches

  • Kosher Salt 2 tsp

Preparation

  1. Preheat Oven

    Preheat the oven to 375F.

  2. Create Biscuit Dough

    Line a sheet pan with parchment paper and set aside. Combine and mix all dry ingredients in a large bowl. Grate the cold butter into the bowl, gently mix to combine. Pour in buttermilk, mix to form a crumbly dough. Turn the dough onto a surface and start working the dough with your hands until a rough ball forms. Lightly flour dough and surface, pat it down slightly and roll out to about 1 inch thick. Cut out 6 rounds with a 2.5-inch biscuit cutter. Place biscuits on the sheet pan and bake for 15 minutes or until biscuits are golden brown on top. Tip! If you're unable to source self-rising flour, you can substitute it by combining 2 cups of all-purpose flour with 1 teaspoon salt, 2 teaspoons baking powder and 1 teaspoon baking soda.

    • 2 cups Self-Rising Flour
    • 1 tsp Kosher Salt
    • 1 tsp Granulated Sugar
    • 1/4 lb, cold Unsalted Butter
    • 3/4 cup Buttermilk
  3. Create Gravy

    Melt butter in a pot over medium-high heat. Add pepper and sage leaves and sauté for 1 minute. Add sausage and cook, breaking it up with a spoon into smaller pieces, for 5 minutes or until slightly browned. Add flour, stir to coat sausage. Pour in milk, stir, scraping the bottom of the pan. Bring to a boil and let simmer for 3 minutes or until slightly thickened. Season with salt and pepper.

    • 1/4 cup Unsalted Butter
    • 1, halved Fresno Pepper
    • 1/4 bunch, leaves picked Fresh Sage Leaf
    • 1 lb Jimmy Dean Pork Sausage
    • 1/4 cup All Purpose Flour
    • 2 1/4 cups Whole Milk
    • 1 tsp Kosher Salt
    • 1 pinch Black Pepper
  4. Serve & Enjoy

    Brush baked biscuits with the ghee. Cut biscuits in half and arrange on a plate. Spoon over with gravy, garnish with sage leaves, and drizzle with olive oil if desired. Finish with black pepper.
