Roasted Sweet Potato Salad - Innit

  • Apple Cider Vinegar 1/4 cup

  • Extra Virgin Olive Oil 5/8 cup

Preparation

  1. Ingredient Prep

    Preheat oven to 350 F. Prepare ingredients. Toss sweet potato in salt & oil. Roast for 15 minutes.

    • 2 pounds, medium diced Sweet Potato
    • 2 tablespoons Kosher Salt
    • 2 tablespoons Extra Virgin Olive Oil
    • 1, segmented Orange
    • 1 teaspoon, ground Black Pepper
  2. Flavor Creation

    Combine ingredients in a medium bowl. Mix well.

    • 1 tablespoon Kosher Salt
    • 1/2 cup Extra Virgin Olive Oil
    • 1/3 cup Roasted Pine Nut
    • 1/2 cup Dried Cranberries
    • 1/4 cup Orange Juice
    • 1/4 cup Apple Cider Vinegar
    • 1 teaspoon, ground Black Pepper
  3. Taste

    Plate potatoes on a platter or bowl. Top with orange segments and pine nut mixture. Garnish with goat cheese, more pine nuts if desired & sage leaves.

    • 1/2 cup, crumbled Soft Goat Cheese
    • 3/8 cup Fresh Sage Leaf
