Traditional Pork Chili - Innit

Ingredients

  • Chicken Stock 2 cups

  • Jimmy Dean Pork Sausage 1 lb

Dry Goods

  • Corn Masa Flour 1/4 cup

Pantry

  • Granulated Sugar 1 tsp

  • Extra Virgin Olive Oil 3 Tbsp

  • Cilantro 2 sprigs

  • Chives 1/4 cup

  • Garlic Clove 3 cloves

  • Yellow Onion 1

Canned/Bottled Goods

  • Tomato Sauce 1 can

  • Tomato Paste 2 Tbsp

  • Chipotles in Adobo 1

Dairy & Eggs

  • Monterey Jack Cheese 1/4 cup

  • Sour Cream 1/4 cup

Spices

  • Ground Coriander 1 Tbsp

  • Kosher Salt 1/2 Tbsp

  • Smoked Paprika 1 Tbsp

  • Ground Cumin 1 Tbsp

  • Chili Powder 1 Tbsp

  • Dried Oregano 1 Tbsp

Preparation

  1. Prepare Onion & Garlic

    Prepare ingredients.

    • 1, diced Yellow Onion
    • 3 cloves, minced Garlic Clove
  2. Create & Cook Chili

    Heat oil in a large pot over medium-high heat. Add onions and garlic, and cook, stirring occasionally, for 3 minutes, or until soft. Add sausage, and cook, breaking it up with a spoon into smaller pieces, for 5 minutes or until slightly browned. Add spices, tomato paste, tomato sauce, chipotle and chicken stock. Stir to mix. Whisk in the corn flour and let simmer, for 5 minutes or until slightly thickened. Season with sugar and salt.

    • 3 Tbsp Extra Virgin Olive Oil
    • 1 lb Jimmy Dean Pork Sausage
    • 1 Tbsp Ground Cumin
    • 1 Tbsp Ground Coriander
    • 1 Tbsp Chili Powder
    • 1 Tbsp Smoked Paprika
    • 1 Tbsp Dried Oregano
    • 2 Tbsp Tomato Paste
    • 1 can, 28 oz Tomato Sauce
    • 1 Chipotles in Adobo
    • 2 cups Chicken Stock
    • 1/4 cup Corn Masa Flour
    • 1 tsp Granulated Sugar
    • 1/2 Tbsp Kosher Salt
  3. Serve & Enjoy

    Ladle chili into bowls. Top with sour cream and cheese. Garnish with chives and cilantro. Serve with favorite tortilla chips (optional).
