Garlic Shrimp with Sauteed Sweet Potato

1 lb Pacific White Shrimp

6 Garlic Cloves

2 tsp Ginger
-
1 Sweet Potato
-
2 Scallions
-
2 bags UNCLE BEN'S® READY RICE® Basmati Rice

3 Tbsp Sesame Seed Oil

2 tsp Soy Sauce
-
1/4 cup Vegetable Broth
-
1 pinch Crushed Red Peppers
-
1 pinch Kosher Salt

1 pinch Black Pepper
STEPS

Prepare ingredients. Set pan to medium heat for 1 minute.
Add oil, garlic, ginger & red pepper flakes. Cook & stir until fragrant, about 30 seconds.
Add shrimp. Raise heat to medium high & cook until shrimp are opaque, 2 to 3 minutes, stirring often.
Add soy sauce & stir to coat.

Prepare ingredients.
Set pan over medium heat for 1 minute. Add oil & sweet potatoes.
Cook & stir until they start to soften, 8-10 minutes.
Add broth, green onions, ginger, & garlic. Cook until the broth evaporates & potatoes are tender & browned - about 10 minutes. Season.

Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.
Add water, and heat on medium-high heat, stirring occasionally, for 2 minutes or until heated thoroughly.

Serve in a bowl over rice or mixed together, stir-fry style!
