Tomatillo Chicken Taco with Red Cabbage Slaw - Innit

  • Garlic Clove 4 cloves

Preparation

  1. Preheat

    Preheat the oven. Line sheet pan with foil.

    Connect Oven
  2. Prep Cabbage Slaw

    Add all ingredients to a bowl. Stir to combine.

    • 1/4 head, sliced Red Cabbage
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1, Juiced Fresh Persian Lime
  3. Salsa Creation

    Toss the tomatillos, onions, jalapenos, & garlic with olive oil. Season. Roast in oven for 20 minutes.

    • 1 pound, quartered Fresh Tomatillo
    • 2 tablespoons Olive Oil
    • 4 cloves, peeled Garlic Clove
    • 1 pinch Black Pepper
    • 1 teaspoon Kosher Salt
    • 1, 1/4 inch circles White Onion
    • 2, sliced in 4 Fresh Green Jalapeño Peppers
  4. Salsa Creation Cont.

    Transfer tomatillo mixture to a blender/food processor. Add remaining ingredients. Pulse several times until chunky.

    • 1/4 bunch Cilantro
    • 1 teaspoon Kosher Salt
    • 1/2, juiced Fresh Persian Lime
    • 1 tablespoon Olive Oil
    • 2 teaspoons Ground Cumin
  5. Sear & Season Chicken

    Prepare ingredients. Set pan to high heat for 2 minutes. Add oil and sliced chicken. Cook for 3 minutes on each side or until golden brown; season halfway through.

    • 1 pound, sliced Boneless Skinless Chicken Breast
    • 1/2, juiced Fresh Persian Lime
    • 2 tablespoons Olive Oil
    • 2 teaspoons Chili Powder
    • 1/2 teaspoon Kosher Salt
  6. Warm Up Tortillas

    Wrap tortillas in kitchen towel. Warm in microwave for 1-2 minutes.

    • 8 White Corn Tortillas
  7. Serve & Enjoy
