Thai Pork Curry - Innit

  • Jimmy Dean Pork Sausage 1 lb

Spices

  • Ground Coriander 1 Tbsp

  • Black Pepper 1/4 tsp

  • Kosher Salt 1 pinch

  • Ground Cumin 1 Tbsp

  • Fresh Ginger 1/4 cup

  • Small Yellow Onion 1

  • Zucchini 3

  • Fresh Lemongrass 2 stalks

  • Cilantro 5/8 bunch

  • Fresh Celery 3 stalks

  • Green Onions 6 stalks

  • Limes 2

  • Serrano Peppers 4

  • Garlic Cloves 9

  • Green Bell Pepper 1

  • Mint 3/8 bunch

  • Fresh Turmeric 2 Tbsp

Canned/Bottled Goods

  • Coconut Milk 1 cup

  • Ghee 1/4 cup

Preparation

  2. Prepare Ingredients

    Prepare zucchini, set aside. Prepare remaining ingredients and combine everything in a large bowl, adding peeled garlic and herbs.

    • 1, chopped Small Yellow Onion
    • 1, seeds removed, chopped Green Bell Pepper
    • 4 Serrano Peppers
    • 3 stalks, chopped Fresh Celery
    • 2 stalks, chopped Fresh Lemongrass
    • 1/4 cup, peeled, chopped Fresh Ginger
    • 2 Tbsp, peeled, chopped Fresh Turmeric
    • 6 stalks, ends trimmed, chopped Green Onions
    • 9 Garlic Cloves
    • 1/4 bunch Mint
    • 1/2 bunch Cilantro
  3. Create Curry Paste

    Place all vegetables into a food processor, and blend, stopping machine and scraping the sides of the bowl occasionally, until a smooth paste forms.

  4. Create Curry

    Heat ghee in a large skillet over medium-high heat. Add sausage, in small pieces, and cook, stirring occasionally, for about 5 minutes or until browned. Add the cumin and coriander, stir to combine. Add zucchini and sauté for 3 minutes or until soft. Add 1 cup of the curry paste, and zest and juice in both limes. Stir to combine. Add coconut milk and let simmer for 5 minutes. Season curry with salt and black pepper and let simmer for another 2 minutes. Tip! Freeze leftover curry paste and use in soups, stews or curries.

    • 1 cup Coconut Milk
    • 1 pinch Kosher Salt
    • 1/4 tsp Black Pepper
  5. Serve & Enjoy

    Ladle curry into a bowl and serve with your favorite side, ours is rice! Garnish with mint and cilantro.
