Creamy Horseradish Beef with Arugula Salad and Potatoes - Innit

Preparation

    Preheat the oven to 425 F. Line sheet pan with foil.

  3. Truss & Cook Prime Rib

    Truss prime rib. Trussing the roast allows the meat to cook evenly & keeps the juices from running. Don't skip this step! Season. Cook for 45 minutes on the middle oven rack.

    • 3 pounds Prime Rib
    • 1 tablespoon Extra Virgin Olive Oil
    • 2 teaspoons Kosher Salt
  4. Bake Potatoes

    Prepare ingredients. Season on sheet pan and set aside. When the meat has cooked for 45 minutes, add the potatoes to a lower rack & roast the potatoes & prime rib for 25 minutes.

    • 1 1/2 pounds, Baby, quartered Yukon Gold Potato
    • 2 tablespoons Extra Virgin Olive Oil
    • 1 teaspoon Kosher Salt
  5. Horseradish Sauce Creation

    Prepare ingredients. Combine all of the ingredients in a medium bowl and mix well.

    • 2 tablespoons, 1oz Tubes Sour Cream
    • 1/4 cup Mayonnaise
    • 1/4 cup Fresh Horseradish
    • 2 tablespoons Chives
    • 1, juiced Lemon
    • 1 teaspoon Sugar
    • 1 tablespoon Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1 pinch Black Pepper
  6. Assemble Salad

    Prepare ingredients. Combine all of the ingredients in a medium bowl and mix well.

    • 8, wedged Red Radish
    • 2, cut into 1/4 " circles Orange
    • 1/4 pound Arugula
    • 1/4 cup Sherry Vinegar
    • 1/4 cup Extra Virgin Olive Oil
    • 1/4 teaspoon Kosher Salt
  7. Serve & Enjoy!

    Allow beef tenderloin to rest for 5 minutes. Remove twine before slicing. Slice into 1/2 inch thick slices against the grain. Top with Creamy Horseradish sauce. Serve with arugula salad & potatoes!
