Oven Baked Chicken with Cauliflower

INGREDIENTS

  • 4 Boneless Skinless Chicken Breasts

  • 1 head Fresh White Cauliflower

  • 2 Garlic Cloves

  • 2 bags UNCLE BEN'S® READY RICE® Whole Grain Brown

  • 1/2 Tbsp Kosher Salt

  • 3 Tbsp Olive Oil

  • 1 pinch Black Pepper

STEPS

  1. Preheat

    Preheat the oven to 425F.

    Line two sheet pans with foil.

  2. Cook Cauliflower

    Toss or coat cauliflower & garlic with olive oil.

    Season with salt.

    Bake for 25 minutes.

  3. Bake Chicken Breast

    Season chicken.

    Bake for 25 - 28 minutes, let rest for 5 minutes.

    * Why rest? Because proteins continue to cook once removed from the oven!

  4. Heat Rice

    Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.

    Add water, and heat on medium-high heat, stirring occasionally, for 2 minutes or until heated thoroughly.

  5. Serve

    Serve chicken with rice & cauliflower.

    Enjoy!
