Sesame Ginger Salmon with Sweet Potatoes and Coconut Rice - Innit

Ingredients

Meat & Seafood

  • Wild Atlantic Salmon 1 1/4 pounds

Canned/Bottled Goods

  • Canned Coconut Milk 1 can

  • Vegetable Broth 1/2 cup

Produce

  • Ginger Root 4 teaspoons

  • Sweet Potatoes 2

  • Scallions 4 1/8

  • Garlic Clove 6 cloves

Spices

  • Kosher Salt 2 teaspoons

  • Black Pepper 1 pinch

Dry Goods

  • Basmati Rice 1 cup

Pantry

  • Sesame Seed Oil 1/4 cup

  • Toasted Unsalted White Sesame Seed 2 teaspoons

  • Soy Sauce 4 teaspoons

  • Water 3/4 cup

Preparation

  1. Cook Coconut Rice

    Combine coconut milk, water & salt in a small pot. Bring to a boil. Add rice & reduce heat. Simmer covered for 20 minutes or until liquid has absorbed. Let stand for 10 minutes. Fluff rice with a fork. Salt to taste.

    • 1 can Canned Coconut Milk
    • 3/4 cup Water
    • 1 teaspoon Kosher Salt
    • 1 cup, uncooked Basmati Rice
  2. Cook Salmon

    Prepare ingredients. Set pan to high heat for 1 minute. Add (half) oil & salmon. Cook for 3-4 minutes or until golden brown. Remove from pan. Add remaining oil, garlic, ginger & green onions to pan. Cook & stir until fragrant, about 30 seconds. Add soy sauce & sesame seeds. Add salmon back to pan. Gently toss to coat with sauce.

    • 2 tablespoons Sesame Seed Oil
    • 4 fillets, diced Wild Atlantic Salmon
    • 2 cloves, minced Garlic Clove
    • 2 teaspoons, minced Ginger Root
    • 4, thinly sliced Scallions
    • 4 teaspoons Soy Sauce
    • 2 teaspoons Toasted Unsalted White Sesame Seed
  3. Sauté Sweet Potato

    Prepare ingredients. Set pan over medium heat for 1 minute. Add oil &w sweet potatoes. Cook & stir until they start to soften, 8-10 minutes. Add broth, green onions, ginger, & garlic. Cook until the broth evaporates & potatoes are tender & browned - about 10 minutes. Season.

    • 1 tablespoon Sesame Seed Oil
    • 1, peeled and cut into 1-inch dice Sweet Potato
    • 1/4 cup Vegetable Broth
    • 2 teaspoons, thinly sliced Scallions
    • 1 teaspoon, minced Ginger Root
    • 2 cloves, minced Garlic Clove
    • 1/2 teaspoon Kosher Salt
    • 1 pinch Black Pepper
  4. Serve and Enjoy
