Tomato Basil Tofu with Red Bell Pepper, Yellow Onion & Brown Rice - Innit

Ingredients

  • Red Bell Pepper 2

  • Thyme 2/3 bunch

  • Garlic Clove 7 cloves

  • Yellow Onion 1

  • Red Tomato 5

  • Basil 3/4 bunch

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 4 pinches

Packaged Products

  • Extra Firm Tofu 2 packages

Pantry

  • Water 1 1/3 cups

  • Olive Oil 3 1/2 tablespoons

Dry Goods

  • Brown Rice 2/3 cup

Preparation

  1. Preheat

    Preheat the oven to 425 F. Line two sheet pans with foil.

    Connect Oven
  2. Boil Water

    Combine all ingredients in a large pot and bring to boil.

    • 1/2 teaspoon Kosher Salt
    • 1 1/3 cups Water
    • 1 pinch Black Pepper
    • 1/2 bunch Thyme
    • 2 cloves, smashed Garlic Clove
  3. Sauce Creation

    Prepare ingredients. Toss tomatoes with garlic, salt, olive oil, basil & black pepper. Roast on bottom rack for 25 minutes.

    • 5, quartered Red Tomato
    • 1/4 bunch, hand torn Basil
    • 1 pinch Black Pepper
    • 1/4 teaspoon Kosher Salt
    • 3 cloves, sliced Garlic Clove
    • 1 tablespoon Olive Oil
  4. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 2/3 cup Brown Rice
  5. Sauce Creation Cont.

    Transfer roasted tomato mixture to a blender/food processor. Add remaining ingredients and blend/pulse until smooth

    • 3/4 bunch, hand torn Basil
    • 1/4 teaspoon Kosher Salt
    • 1 tablespoon Olive Oil
    • 1 pinch Black Pepper
  6. Bake Tofu

    Drain tofu and pat dry. Season. Bake for 22 - 28 minutes.

    • 1 pinch Black Pepper
    • 2 packages, halved Extra Firm Tofu
    • 1 1/2 tablespoons Olive Oil
    • 1 teaspoon Kosher Salt
  7. Cook Peppers & Onions

    Toss peppers, onion, garlic & thyme together. Drizzle with olive oil & season. Bake for 13 minutes.

    • 2, sliced Red Bell Pepper
    • 1, sliced Yellow Onion
    • 1 pinch Black Pepper
    • 1 tablespoon Olive Oil
    • 2 cloves, sliced Garlic Clove
    • 1 teaspoon Kosher Salt
    • 4 sprigs Thyme
  8. Serve & Enjoy!
