1 bunch Broccolini

1 Thai Chili Pepper

3 Garlic Cloves

1 Lemon

7 sprigs Oregano

1/4 cup Parmigiano Reggiano Cheese

1 lb Rotini

1 tsp Kosher Salt

2 Tbsp Extra Virgin Olive Oil

1 pinch Black Pepper

Preheat the oven to 375F.

Prepare vegetables.
Arrange vegetables on a sheet tray.

Arrange sausage in small pieces on top of vegetables, add oregano. Drizzle with olive oil and season with salt and pepper.
Bake for 16 minutes or until sausage is cooked through and slightly browned.

In a large pot, bring water to a boil on medium-high heat. Heavily salt water.
Cook pasta until al dente, firm to bite but not soft.

Toss sausage-vegetable mix and pasta in a large bowl.
Zest in lemon and add parmesan cheese. Toss to coat.

Arrange pasta on a plate and garnish with oregano.
If desired, finish with extra parmesan cheese.
