Penne Pomodoro with Bacon & Butternut Squash - Innit

Ingredients

  • Bacon 5 slices

Canned/Bottled Goods

  • Canned Crushed Tomatoes 1 3/4 pounds

Produce

  • Garlic Clove 2 cloves

  • White Onion 1/2

  • Butternut Squash 1/2

  • Fresh Sage 1/4 bunch

  • Basil 1/4 bunch

Spices

  • Kosher Salt 3 1/2 teaspoons

  • Black Pepper 1/2 teaspoon

Dry Goods

  • Penne 2 cups

Pantry

  • Olive Oil 1/3 cup

  • Sugar 1/2 tablespoon

Preparation

  1. Preheat

    Preheat the oven to 425 F. Line two sheet pans with foil.

    Connect Oven
  2. Roast Butternut Squash

    Toss squash with olive oil. Season with salt & sage. Bake for 25 minutes.

    • 1/2, diced Butternut Squash
    • 1 tablespoon Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1/4 bunch, hand torn Fresh Sage
  3. Simmer Sauce

    Prepare ingredients. Set a pan to medium high heat. Add oil; saute onion & garlic for 3 minutes. Add tomatoes, simmer for 10 minutes.

    • 1/4 cup Olive Oil
    • 1/2, chopped White Onion
    • 2 cloves, minced Garlic Clove
    • 1 3/4 pounds Canned Crushed Tomatoes
  4. Boil Pasta

    Bring a large pot of water to a boil; add salt. Cook penne until al dente, firm to bite but not soft.

    • 2 cups Penne
    • teaspoon Water
    • 1 tablespoon Kosher Salt
  5. Bake Bacon

    Arrange bacon slices on sheet tray. Bake for 15 minutes until bacon is golden brown & crispy. Roughly chop.

    • 5 slices, sliced Bacon
  6. Season Sauce

    Season sauce.

    • 1/4 bunch, hand torn Basil
    • 1 tablespoon Kosher Salt
    • 1/2 teaspoon Black Pepper
    • 1/2 tablespoon Sugar
  7. Serve and Enjoy!
