Chimichurri Tri Tip with Carrots and Mash Potatoes - Innit

  • Butter 1 tablespoon

  • Heavy Cream 1 cup

  • Red Wine Vinegar 1/4 cup

Preparation

  1. Gather Ingredients

  2. Preheat

    Preheat the oven to 425 F. Line sheet pan with foil.

    Connect Oven
  3. Season & Cook Tri Tip

    Season tri tip. Cook for 35 minutes on middle rack.

    • 2 pounds Tri-Tip
    • 1 teaspoon Kosher Salt
    • 1/2 teaspoon Black Pepper
    • 1 tablespoon Extra Virgin Olive Oil
  4. Prep Mashed Potatoes

    Prepare ingredients and bring to a boil. Reduce to med high heat and cook potatoes for 20 mins.

    • 1 1/2 pounds, baby, quartered Yukon Gold Potato
    • 6 cups Water
    • 2 teaspoons Kosher Salt
  5. Season & Cook Carrots

    Season carrots in a bowl. Add carrots to the Tri Tip sheet pan once it's cooked for 20 minutes.

    • 1 pound Carrot
    • 1 tablespoon Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1/4 teaspoon Black Pepper
  6. Chimichurri Creation

    Prepare ingredients. Combine all of the ingredients in a small to medium bowl and mix well.

    • 4 cloves, minced Garlic
    • 1/4 cup Red Wine Vinegar
    • 0.5 ounce, finely chopped Parsley
    • 0.5 ounce, finely chopped Oregano
    • 2, juiced Lime
    • 1/4 cup Extra Virgin Olive Oil
    • 1 teaspoon Kosher Salt
    • 1 teaspoon Black Pepper
  7. Season & Mashed Potatoes

    Strain potatoes in sink. Place back in same pot. Mash all ingredients together. Cover to keep warm.

    • 1 1/2 pounds, BABY Yukon Gold Potato
    • 4 cloves, minced Garlic
    • 1 tablespoon Butter
    • 1 cup Heavy Cream
  8. Serve & Enjoy!

    Allow protein to rest before slicing. Slice tri tip into 1/4" thick slices & top with Chimmichuri sauce. Serve with potatoes and carrots.
