1 cup Green Peas

1/4 cup Italian Parsley

1 sprig Garden Fresh Thyme

2 Tbsp Unsalted Butter

1/2 cup Heavy Cream

2 cups Panko Breadcrumbs

1/2 cup Beef Stock
-
1/2 Tbsp Ground Garlic

2 tsp Mustard Powder
-
3 1/8 tsp Kosher Salt
-
2 Tbsp Worcestershire Sauce

5/6 cup Extra Virgin Olive Oil

1 pinch Black Pepper
STEPS

Prepare potatoes.
Place potatoes in a large pot and cover with water.
Boil the potatoes for 15 minutes or until soft. Drain to discard water.
Meanwhile, prepare carrots and onions.

Mix potatoes with a hand held mixer until crumbly.
Add cream, butter, olive oil and salt. Mix until smooth.

Preheat the oven to 375F.

Heat oil in a large skillet over medium-high heat.
Add sausage, in small pieces, and thyme, and cook, stirring occasionally, for about 5 minutes or until browned.
Add onions, carrots, stock, mustard powder and Worcestershire sauce. Season with salt and pepper and let simmer for 8 minutes.
Add peas and parsley, mix to combine.

Mix ingredients in a medium bowl until combined.

Layer the bottom of a casserole or baking dish with the meat mixture.
Layer meat mixture with mashed potatoes and cover with panko crumble.
Bake for 15 minutes or until crumble is golden brown and casserole is heated through.
Let sit for 5 minutes before serving.

Drizzle pie with olive oil if desired, and garnish with parsley.
Plate and enjoy!
