Cilantro Lime Cauliflower Bowl with Chicken Breast - Innit

Ingredients

  • Boneless Skinless Chicken Breasts 4

Spices

  • Kosher Salt 1 teaspoon

  • Black Pepper 1 pinch

  • Red Pepper Flakes 1/2 teaspoon

Produce

  • Cauliflower 1 head

  • Cilantro 1/2 cup

  • Fresh Persian Lime 1

Pantry

  • Sunflower Seeds 2 tablespoons

  • Olive Oil 1/4 cup

Canned/Bottled Goods

  • Fish Sauce 1 teaspoon

  • Vegetable Stock 1/2 cup

Preparation

  1. Sear Chicken

    Set pan over high heat for 2 minutes. Add olive oil & sliced chicken. Cook for 6 minutes until golden brown, seasoning halfway through.

    • 4, sliced Boneless Skinless Chicken Breasts
    • 2 tablespoons Olive Oil
    • 1 teaspoon Kosher Salt
    • 1 pinch Black Pepper
  2. Chop Veggies

    Prepare ingredients. Set pan to high heat for 2 minutes. Add oil & cauliflower; cook for 3 minutes. Add stock, cover & cook for 3 minutes.

    • 1 head, chopped Cauliflower
    • 1, zested Fresh Persian Lime
    • 2 tablespoons Olive Oil
    • 1/2 cup, or chicken stock Vegetable Stock
  3. Cook Cauliflower

    Add ingredients to cauliflower. Garnish with torn cilantro. Stir to combine.

    • 1 teaspoon Fish Sauce
    • 1, juiced, zested Fresh Persian Lime
    • 1/2 teaspoon Red Pepper Flakes
    • 1/2 cup, hand torn Cilantro
    • 2 tablespoons Sunflower Seeds
  4. Combine Chicken and Cauliflower

    Give it a stir. Enjoy!
