Baby Artichoke Salad - Innit

  • Fennel Bulb 1 cup

  • Kosher Salt 2 tablespoons

  • Black Pepper 2 teaspoons

Dairy & Eggs

  • Sour Cream 1/4 cup

  • Canned Artichoke Heart 3 cans

  • Extra Virgin Olive Oil 1/2 cup

Preparation

  1. Ingredient Prep

    Prepare ingredients.

    • 3 cans, halved Canned Artichoke Heart
    • 1 cup, shaved Fennel Bulb
    • 8, small dice Anchovy
    • 1/4 cup, chopped Chives
    • 1/4 cup, chopped Parsley
    • 3 cups, diced, crust off Sourdough Bread
  2. Crouton Creation

    In a saute pan, slowly heat up the oil, garlic & thyme. Add in bread & salt. Cook until golden brown on low. Remove from pan & place on paper towels to dry.

    • 1/4 cup Extra Virgin Olive Oil
    • 3 cups, diced, crust off Sourdough Bread
    • 1 tablespoon Kosher Salt
    • 1 teaspoon, ground Black Pepper
    • 4 sprigs, or more Thyme
    • 5, smashed Garlic Clove
  3. Sour Cream Mixture

    Combine ingredients & stir. Save some parsley for garnish!

    • 8, small dice Anchovy
    • 1/4 cup Mayonnaise
    • 1/4 cup Sour Cream
    • 1/4 cup, chopped Parsley
  4. Flavor Artichokes

    Combine ingredients & mix gently.

    • 3 cans, halved Canned Artichoke Heart
    • 1 cup, shaved Fennel Bulb
    • 1, zested & juiced Lemon
    • 1/4 cup Extra Virgin Olive Oil
    • 1 tablespoon Kosher Salt
    • 1 teaspoon, ground Black Pepper
  5. Serve

    Layer serving dish with sour cream mix, fennel artichoke salad, then bread. Garnish with chives & parsley. Enjoy!
