Wheatberry Salad - Innit

Ingredients

  • Rocket 2 cups

  • Red Onion 1

  • Lemon Juice 3 tablespoons

  • Anjou Pears 2

Spices

  • Kosher Salt 4 teaspoons

  • Black Pepper 2 teaspoons

Dairy & Eggs

  • Danish Blue Cheese 1/2 cup

Pantry

  • Olive Oil 1/2 cup

Dry Goods

  • Wheatberry 1 cup

Preparation

  1. Cook Wheatberries

    Bring wheatberries, salt & water to a boil. Simmer for 40 minutes.

    • 1 cup Wheatberry
    • 3 cups Water
    • 1 teaspoon Kosher Salt
  2. Ingredient Prep

    Prepare ingredients.

    • 2, sliced Anjou Pears
    • 1, julienned Red Onion
  3. Salad Assembly

    Combine ingredients in a large bowl. Mix well.

    • 1 cup Wheatberry
    • 1 tablespoon Kosher Salt
    • 2 cups Rocket
    • 2, sliced Anjou Pears
    • 1, julienned Red Onion
    • 1/2 cup Olive Oil
    • 3 tablespoons Lemon Juice
    • 2 teaspoons, ground Black Pepper
  4. Taste

    Plate the salad into a bowl or on a plate and garnish with the blue cheese on top.

    • 1/2 cup, crumbled Danish Blue Cheese
