Potato Salad - Innit

  • Fresh Celery 3/4 cup

  • Red Onion 3/4 cup

  • Fresh Red Ruby Potato 1 1/2 pounds

Spices

  • Red Wine Vinegar 1 tablespoon

  • Kosher Salt 3 tablespoons

Dairy & Eggs

  • Sour Cream 1/4 cup

  • Egg 4

Pantry

  • Yellow Mustard 2 tablespoons

  • Sweet Relish 1/4 cup

Canned/Bottled Goods

  • Mayonnaise 1/4 cup

Preparation

  1. Ingredient Prep

    Boil two pots of water. Prepare ingredients. Reserve celery leaves for garnish!

    • 1 1/2 pounds, quartered Fresh Red Ruby Potato
    • 12 cups Water
    • 3/4 cup, diced Fresh Celery
    • 3/4 cup, diced Red Onion
  2. Prepare Salad

    Drop eggs into boiling water & cook for 13 minutes. Ice when done. Drop potatoes into second pot of boiling water. Cook covered for 10 minutes.

  3. Grate Eggs

    Using a cheese grater, grate the hard boiled eggs.

  4. Salad Assembly

    Combine ingredients in a large bowl. Mix well.

    • 1 1/2 pounds, quartered Fresh Red Ruby Potato
    • 1 tablespoon Kosher Salt
    • 4 Egg
    • 3/4 cup, diced Fresh Celery
    • 3/4 cup, diced Red Onion
    • 2 tablespoons Yellow Mustard
    • 1/4 cup Sweet Relish
    • 1/4 cup Sour Cream
    • 1/4 cup Mayonnaise
    • 1 tablespoon Red Wine Vinegar
  5. Taste

    Plate on platter or bowl. Garnish with celery leaf. Top with ground black pepper & extra virgin olive oil if desired!
