Watermelon Wedge Salad - Innit

  • Bacon 6 slices

  • Mayonnaise 1/2 cup

  • Watermelon 2 cups

  • Cherry Tomatoes 1 cup

  • Chives 1/4 cup

  • Iceberg Lettuce 1 head

  • Orange 1

  • Basil 1/4 cup

Spices

  • Red Wine Vinegar 1/4 cup

  • Kosher Salt 1 1/2 tablespoons

  • Black Pepper 1 tablespoon

Dairy & Eggs

  • Danish Blue Cheese 1 cups

  • Sour Cream 1/2 cup

Preparation

  1. Ingredient Prep

    Preheat oven to 350 F. Prepare ingredients. Reserve 1 tbsp chives for garnish! Cook bacon for 15 minutes.

    • 5 slices Bacon
    • 1 head Iceberg Lettuce
    • 2 cups, diced Watermelon
    • 1 cup, halved Cherry Tomatoes
    • 1/3 cup, sliced Chives
  2. Make Dressing

    Combine ingredients in a medium bowl & mix well.

    • 1/2 cup Sour Cream
    • 1/2 cup Mayonnaise
    • 1/4 cup Red Wine Vinegar
    • 1 1/2 tablespoons Kosher Salt
    • 1 tablespoon, ground Black Pepper
    • 1/4 cup, sliced Chives
    • 1 cup, crumbles Danish Blue Cheese
  3. Salad Assembly

    Place the iceberg lettuce on a platter & top with the dressing. Add tomatoes, hand-torn bacon, watermelon & basil. Garnish with blue cheese & orange zest. Enjoy!
